Method: Gently warm the caramel sauce so it becomes pourable, then whisk it into the heavy cream along with the vanilla extract and salt. Ensure the mixture is fully combined before pouring into the dispenser. Charge and shake. The caramel adds body and sweetness while the salt creates that signature sweet-savoury contrast.

4. Citrus Cream for Cocktails and Desserts

Ingredients: 500ml heavy cream, zest of 2 lemons (or limes, or oranges), 2 tablespoons sugar, 1 tablespoon fresh citrus juice.
Method: Combine the citrus zest with the sugar and let it sit for 15 minutes to allow the oils to infuse. Add the cream and citrus juice, stir well, then strain through a fine mesh sieve into the dispenser to remove the zest pieces (they can clog the nozzle). Charge and shake. The result is a delicate cream with bright citrus notes that cuts through rich desserts and elevates cocktails.

5. Savoury Herb Espuma for Fine Dining

Tips for the Best Results
- Always use cold cream — Cream at 4°C or below produces the best foam structure and longest hold time.
- Use cream with 35%+ fat content — Lower fat cream will not hold its shape. Full-fat heavy cream or whipping cream is essential.
- Do not overshake — 3–4 vigorous shakes is enough. Overshaking can make the cream too dense.
- Clean your dispenser after every use — Residual cream in the nozzle and head will sour and contaminate the next batch.
